Instant Chia Vegetable Broth

This is a very simple broth and a great energising pick-me-up when you are too busy to stop for a meal.
Its low calorie and a great appetite suppressant at the start of a meal if you want to lose weight.

The recipe below serves one adult or two children.

Ingredients

One and a half cups of vegetable stock

or

make up one and a half cups of vegetable stock using good quality, low salt stock cube or powder to taste

1 Tablespoon of chia seeds

chopped parsley, or sliced scallions or chopped chives for garnish

Method

Add 1 Tablespoon of chia seeds to the stock.
Leave to soak for 10 to 15 minutes so the seeds can soften and swell.
Whisk the mixture a few times while the seeds are softening to prevent clumping.
Heat, add garnish and enjoy. Great with a small crusty dinner roll.

You can also add 1 Tablespoon of chia seeds to a cup and a half of any commercial soup mix that is not thickened, such as brown onion soup or chicken noodle soup. Soak the seeds in the water you add to the soup first if it is a packet mix.

For even more nutrition, try adding a pinch of powdered seaweed.
