Hearty Chia Breakfast Eggs

This makes a very satisfying, tasty and nutritious breakfast. The egg/chia mixture has a consistency similar to couscous when cooked.

Ingredients per person

1 egg

1 Tablespoon of chia seeds – preferably white

a great start to the day

hearty chia breakfast eggs

half a small onion

a handful of baby spinach

a splash of milk – about 2 teaspoons

Method

.

Whisk the egg and milk and soak the chia seeds in the mixture for 15 minutes

Chop the onion finely and gently fry in a non stick frypan with a little butter or oil until soft and slightly brown.

Add the egg/chia seed/ milk mixture to the pan and stir until set.

Add the baby spinach leaves and stir the mixture until leaves are slightly wilted.

Season to taste, (great with a little sea salt and ground black pepper), serve and enjoy

    That is a healthy diet, and it is great that you are trynig to be healthy,unlike so many people nowadays who just don’t try. Explain to your friends that you just want to be healthy and you still eat the right amount every day, just better quality food and as a result you are a healthier weight, not a dangerous one. You eat plenty, tell your friends that. I also try to eat healthy and practice yoga. Opinion here, but I would not recommend becoming vegan. I tried that once, and I did not feel very well because in the first place I am gluten intolerant and I ate a lot of grains going vegan, and I got really bad acne because there are certain vitamins, fat-soluble ones like vitamin A, that are hard to get from vegetables and furthermore they must be eaten with some fat to be absorbed. So, do the vegan thing at your own risk, you could miss out on some vitamins.

    I just mix 4 table ions of chia seeds with 3 raw egg whites. Doesn’t touch the sides and no seeds left between my teeth. Argh !,

      Some people don’t like the “crunchiness” of the chia seeds in some recipes, or the fact that they stick between the teeth. To solve this, I just mill them (grind them) before putting them into a recipe. No crunch and no seeds stuck in my teeth. I love chia and put it in everything I can think of.

      Yes, you can do that, or you can buy ground chia seeds. Ground chia seeds does give a different texture in foods when compared to whole chia seeds. Some people prefer it.

    Can we take Chia seeds without mixing any thing if yes then what time it should be taken ?

      Yes you can eat chia seeds raw, without adding anything to them. Some people like them this way. Personally I don’t like eating them like this because they start to form a gel in your mouth by absorbing your saliva by the time you have finished chewing them and this leaves a dry feeling in your mouth. Be sure to follow up with a drink of water otherwise you could develop constipation. Chia seeds are a healthy food and you can eat them any time you want, unless you are dieting, in which case its best before meals.

        I tried just eating them plain and raw and I was picking little goopy seeds out of my mouth for hours. I am still experimenting with how to eat them and not have this happen, so I would love suggestions.

          The first time I had chia seeds, I just munched on a teaspoon of raw seeds. Yes, they do stick between your teeth! Any recipe where you add the chia seeds to liquid and let it stand will reduce this effect. Try gels, puddings or smoothies, or just add some to oatmeal, soups or casseroles. A little experimenting will help you find a way to enjoy them easily Randa.

            I just added a tablespoon of chia seeds to a glass of water and drank it then followed up with another glass – no taste, no gritty bits; very easy to drink!

            Yes it is easy to take chia seeds that way Natalie. I do it myself sometimes. It is very quick and easy, just gets a bit boring when there are so many ways to have chia seeds.

          That is the funniest thing I have heard all morning. I mix mine with spring water and then half and half with fruit juice or nut milk for a quick invigorating morning snack.

          No problem… just grind them into a flour first. Use a clean coffee or herb grinder. I have a professional Waring brand herb grinder that works great, but I used my coffee grinder for this and many other things before I bought the Waring. You don’t have to purchase a professional grinder. Any grinder will work.

    I’vejust received an order of ‘chia seed’, but it is not specified whether they are whilte, black or brown. They appear to be brown with light or white ones mixed in them. How can I tell whether they are quality seeds?

      Hi Betty. Chia seeds should be labelled black or white. The black seeds will have a few white seeds among them and the white will have a few black ones. I have also seen black and white seeds packaged together. However brown chia seeds are immature and/or inferior in quality. There is a picture of good quality black seeds on the home page of this site.

    i have chia seed whole made in Mexico > it has white, black, and brown. looks like salt and pepper..
    do you have a recipes?.. that can help me with my weight loss?.. this is my first time using this.

      I have used a mixture of white and black seeds, but be wary of a mix that has brown seeds in as they could be immature or inferior seeds Cuca. When I want to lose weight, I have a hearty breakfast with a Tablespoon of chia seeds included (such as the hearty chia breakfast eggs) then before each remaining meal have 1Tablespoon of seeds in water. Sometimes I incorporate the tablespoon of chia seeds in my meal (such as in soup) 3 to 4 Tablespoons of chia seeds per day is recommended for weight loss. This is laid out in detail in my book, The chia seed weight loss diet.

    How much per recipe should I use of the chia seeds? Can too much be used? Can I add chia seeds to all that I eat in a day?

      Chia seeds are classed as a food by the FDA and no llimits have been set Nancy. You can add chia seeds to all you eat in a day if you wish. Most of my recipes use half to one tablespoon of chia seeds per serve. I like to have one to two tablespoons of chia per day, more – 3 to 4 Tablespoons when I was using chia for weight loss.

    I’m so glad I have found this site I have just heard about these chia seeds from a co worker and I found these at my grocery store on Friday made some of the gel I am going to make these eggs for breakfast today and hope to reap the benefits of this wonderful little seed. Will also try some of the other recipes.

    Just made this for lunch, it was delicious! I also added some diced red pepper and raw cheddar cheese then topped with fresh cilantro. What a creative and healthy meal!

    1d or one dessertspoon full should be 10ml. 1T or one tablespoon is 15ml and 1t or one teaspoon is 5ml. So 1d = 2t and 1T = 3t. i hope that is helpful, but the above recipe calls for 1T. if you do not have a measuring spoon, use a normal table spoon or a normal dessertspoon but heaped. or if you wish to be more accurate, 3 level teaspoons.

      A dessertspoon of chia seed is half a tablespoon. Many chia seed sellers provide a scoop with their chia seeds which is usually one rounded tablespoon.
