This is one of my favourite summer breakfast dishes. Sometimes I add fresh berries for a special treat.
Ingredients for one serve
1 serve of plain unsweetened yogurt (about a cupful)
1 tablespoon chia seeds
one third of a cup of good quality unswetened fruit juice — I have used cranberry, pomegranate, mixed berry, cloudy apple, apple and mango, orange and mango and apricot. All taste great. Of course, you can also juice your own fruit.
Mix the chia seeds into the juice and leave for 10 to 15 minutes to form a gel
Put the yogurt into a bowl, pour the fruit juice gel over the top then swirl the gel through a couple of times.
I think it looks and tastes much nicer if you can see the two toned effect, but some people like to mix the gel and yogurt together more thoroughly. Experiment to see which way you prefer yours
