Pinole is a traditional Native American recipe using ground corn. This version uses ground chia seeds.
2 tablespoons chia seeds
1 teaspoon cinnamon
1 and a half tablespoons honey
Grind the chia seeds into a fine powder in a coffee grinder or blender with a grinding attachment.
In a heavy bottomed frypan heat the ground chia until it is starting to brown slightly.
Take of the heat and transfer to a mixing bowl.
Add the cinnamon and mix well.
Add the honey and mix through until the mixture is the consistency of breadcrumbs.
This mixture is sweet and spicy and can be used in many different ways.
Sprinkled over cereals
Sprinkled over yogurt or icecream
Mixed with melted butter and used as a base for cheesecake
Mixed into cookie mixtures or cake batters
Incorporated into the topping of fruit crumbles.
Make a double or triple quantity to have some on hand as its a very easy way to add chia seeds to your daily diet.
