Chia Pinole Fruit Puff

Chia Pinole Fruit Puff – 4 serves

A quick and easy dessert with the goodness of dried fruit and chia seeds.

Ingredients

2 tablespoons chia seeds
1 teaspoon cinnamon
1 and a half tablespoons honey
1 sheet of frozen puff pastry
1 xup of chopped dried fruit of choice (eg sultnas, dates, apricots)

Method

Make chia pinole
Grind the chia seeds into a fine powder in a coffee grinder or blender with a grinding attachment or use milled chia.
In a heavy bottomed frypan heat the ground chia until it is starting to brown slightly.
Take off the heat and transfer to a mixing bowl.
Add the cinnamon and mix well.
Add the honey and mix through until the mixture is the consistency of breadcrumbs.

Sprinkle the chia pinole evenly over the puff pastry
sprinkle the dried fruits over the pinole.

When the pastry has thawed (a few minutes) roll up and place on an oiled or non stick baking tray.
Glaze the tip with a little melted butter, oil or beaten egg and cook in a medium oven for 15 to 20 minutes,
When cooked, cut into slices and serve with ice-cream, yogurt or custard.
