Chia creamed brown rice

This simple recipe is a great way to use up left over brown rice. Serve it

as a breakfast dish or as a dessert. Next time you cook brown rice, cook a

little extra for this dish. Its a very quick, easy and delicious recipe.

This makes about 4 servings.


2 cups of cooked brown rice

1 cup of apple juice or fruit juice of your choice

1 to 2 tablespoons of chia seeds depending on how firm you want this dish to be

chia creamed brown rice

1 cup of natural unsweetened yogurt


Put 2 cups of cooked brown rice into a mixing bowl.

Add the chia seeds and fruit juice. Stir well and allow to stand for a few

minutes to allow the chia seeds to soften and swell.

Finally stir the yogurt through and mix well.

You could also add some chopped dried fruit if you like.

    Thank you for all the great recipes on your site!
    Can you recommend a substitute for the yogurt in this creamed brown rice recipe? (We don’t eat dairy.) I assume that simply using almond or soy milk would negatively affect the consistency of the recipe. What do you think?

      Why not try coconut cream Elicia? I feel this would keep the consistency very similar to the original recipe. You can buy organic coconut cream and its very nutritional. If you use almond or soy milk, the consistency would be thinner, but if you let it stand for longer, say overnight, the rice and chia seeds may be able to absorb the extra liquid. I’m just not sure abou this. Good luck 🙂
